A recent study conducted by the USDA Food Safety and Inspection Service determined the cost of developing, validating and assessing HACCP, sanitary standard operating procedures (SSOPs) and food safety training in addition to third party audits.
The study determined the range in the cost of developing food safety plans including HACCP and SSOPs together with sampling to amount to $6,000 to $87,000 depending on the plan and the size of the establishment. Training in food safety can range from $120 to $2,500 per employee. Third party audits can range in cost from $13,000 to $24,000.
The study was initiated to assess the investment and the effects of food safety regulations in order to develop cost-effective alternatives. Given the current regulatory environment associated with the new Administration, all regulations will be reviewed for their applicability and contribution to public health and food safety.
